The world number one triumphed 6-1 4-6 6-3 in two hours and 24 minutes to set up a last-eight clash with Alexander Bublik in Monaco.
After cruising through the first set, breaking Etcheverry's serve three times, Alcaraz found himself 4-1 down in the second.
The Spaniard had the opportunity to bring the second set back on serve, but squandered a break point opportunity at 5-3 down before Etcheverry forced a decider.
Alcaraz found his rhythm again, though, breaking Etcheverry in a long second game on his way to a 3-0 lead.
The 22 year-old then saved a break point to go 5-2 in the decider and clinched victory with his third match point.
